Mexican Beef and Corn Casserole

All you need:

  • 1 pound lean ground beef
  • 1/3 c. chopped fresh cilantro, optional
  • 1 (15.5 oz) can reduced-sodium black beans, drained
  • 1 (11 oz) can Mexicorn, drained
  • 2 tbsp Country Crock spread
  • 1/2 c. salsa
  • 2/3 c. fat-free sour cream
  • 1/4 c. shredded low-fat cheddar cheese

All you do:

  1. Preheat oven to 400 degrees.
  2. Cook ground beef in 12-inch nonstick skillet over medium-high heat, stirring frequently, until beef is done, about 5 minutes. Remove from heat, then stir in cilantro.
  3. Combine black beans, corn and Country Crock spread in 8-inch baking dish. Top with beef mixture; spread with salsa and sour cream and sprinkle with cheese.
  4. Bake 20 minutes or until heated though and cheese is melted.
