Lower-Sodium Ham, Spinach and Edamame Noodle Bowl

All you need:

  • 3/4 c. Hy-Vee 33%-less-sodium chicken broth
  • 3/4 c. water
  • 1 (3 oz) pkg ramen noodles (discarding seasoning packet)
  • 1 c. fresh spinach leaves
  • 1/2 c. frozen shelled edamame
  • 3/4 c. chopped cooked ham
  • 1 green onion, sliced
  • 1/8 tsp Hy-Vee dried thyme
  • Hy-Vee black pepper, to taste

All you do:

  1. In a medium saucepan, bring chicken broth and water to a boil. Add ramen noodles and edamame and cook 3 minutes, stirring occasionally. When noodles are cooked and tender, stir in spinach, edamame, ham, green onion, thyme and black pepper. Heat through.
