Lemon and Basil Scallops

All you need:

  • 2 tbsp Hy-Vee Select garlic-flavored olive oil
  • 1 1/2 lbs fresh scallops
  • 3 tbsp chopped fresh basil
  • juice of 1 lemon
  • Hy-Vee salt and black pepper, to taste
  • hot cooked pasta, optional

All you do:

  1. In a large skillet, heat oil over medium-high heat. Add scallops and basil; sauté 2 minutes.
  2. Add lemon juice and salt and pepper; sauté another 2 to 3 minutes or until opaque.
  3. Serve with hot pasta if desired.
