Grilled Cod with Cherry and Nectarine Salsa

All you need:

  • 2 fresh nectarines
  • 1 c. fresh Stemilt cherries
  • 2 tbsp finely chopped fresh cilantro
  • 1 tbsp lime juice
  • Salt, to taste
  • 4 (4 to 6 oz each) cod fillets

All you do:

  1. Peel and dice nectarines into small pieces and place in a mixing bowl.
  2. Pit and chop cherries into small pieces and add to nectarine pieces.
  3. Add cilantro to fruit. Add lime juice and salt, stirring until all the fruit is coated with the lime juice. Let sit at room temperature until the cod is finished cooking.
  4. Grill the cod fillets until done, put on plates and serve topped with the salsa.
