Gorgonzola, Arugula and Raisins on Honey Whole Grain

All you need:

  • 1 (8 oz) loaf Baking Stone honey whole grain bread, sliced diagonally to 1/2-inch-thick slices
  • 1 tbsp plus extra Hy-Vee Select olive oil to spread on bread
  • 1/2 c. soft gorgonzola cheese
  • 1/3 c. mascarpone
  • 3 c. baby arugula
  • 1 1/2 tsp red wine vinegar
  • 1 pear, cored and thinly sliced
  • 3 tbsp golden raisins
  • 1/2 c. toasted Hy-Vee walnuts
  • Hy-Vee honey, for drizzling

All you do:

  1. Brush bread slices with olive oil. Cook on a preheated ridged pan on the stove top until toasted or in the oven at 350 degrees on a sheet pan for 5 to 10 minutes, until crisp.
  2. In a small bowl, mash gorgonzola and mascarpone together. In a large bowl, toss arugula with 1 tablespoon olive oil and vinegar. Spread gorgonzola mixture on toasted bread. Top with pear slices, arugula mixture, raisins and walnuts. Drizzle with honey.
