Decadent Deviled Eggs

All you need:

  • 6 hard-boiled egg yolks
  • 2 tbsp Hy-Vee light mayonnaise
  • pinch cayenne
  • 1 tbsp minced shallots
  • 1 tbsp minced celery
  • 1/2 tbsp chopped parsley
  • 1/2 tbsp Hy-Vee Dijon mustard
  • 2 oz lump crab meat
  • 1 tbsp Hy-Vee Select extra-virgin olive oil
  • 2 tbsp chopped chives
  • 2 strips cooked bacon, minced, optional

All you do:

  1. Mash yolks with fork. Stir in mayonnaise, cayenne, shallots, celery, parsley and mustard until well blended. Set aside. In another bowl, mix crab, olive oil and chives. Refill whites, using about 1 tablespoon yolk mixture for each egg half. Top with the crab mixture. Chill to blend flavors. Garnish with bacon, if desired.
