All you need:

  • 2/3 c. light coconut milk
  • 1 1/3 c. water
  • 2 c. dry Hy-Vee instant white rice
  • 1 (14.5 oz) can Hy-Vee red beans, drained
  • 1 c. chopped yellow onion
  • 1 tsp Cajun seasoning

All you do:

  1. In a medium saucepan, bring coconut milk and water to a boil. Add rice, beans, onions and Cajun seasoning. Return to a boil, cover, remove from heat and let stand 5 minutes.
  2. If desired, return to heat and cook 4 to 6 more minutes. Serve hot.
