Cajun Grouper Sandwiches

All you need:

  • 1 pound grouper, skin and bones removed, cut into 8 pieces
  • 2 tsp lower-sodium Cajun seasoning
  • 2 tsp Hy-Vee Select olive oil
  • 4 Hy-Vee whole wheat hamburger buns, split and toasted
  • 4 lettuce leaves
  • 4 tbsp prepared guacamole

All you do:

  1. Season grouper with Cajun seasoning.
  2. Heat olive oil in a large skillet over medium heat. Place grouper pieces in the skillet and cook 10 to 12 minutes, turning once, or until golden brown.
  3. Place 2 pieces of grouper on the bottom halves of each hamburger bun. Top with lettuce leaves, guacamole and top half of bun.
