Apple Deviled Eggs

All you need:

  • 1 shallot, diced
  • 1/2 green apple, diced
  • 1 1/2 tsp Hy-Vee Select olive oil
  • 6 hard-boiled egg yolks
  • 1 tsp chopped fresh parsley
  • 2 tbsp Hy-Vee light mayonnaise
  • 1/2 tsp Hy-Vee Dijon mustard
  • Diced apple, optional

All you do:

  1. In a small skillet, sauté shallot and apple in olive oil about 2 minutes; set aside.
  2. Mash yolks with fork. Stir in parsley, mayonnaise, mustard and apple mixture until well blended. Refill whites, using about 1 tablespoon yolk mixture for each egg white half. Chill to blend flavors. Garnish with diced apple if desired.
