Almost Cajun Salmon

All you need:

  • 1 c. Hy-Vee mayonnaise
  • 2 tbsp minced garlic
  • 2 tbsp Cajun's Choice blackened seasoning
  • 1 tsp lemon zest
  • 2 tbsp lemon juice
  • dash white vermouth
  • 4 (6 oz to 8 oz each) boneless, skinless salmon fillets
  • 2 tbsp chopped fresh cilantro, for garnish

All you do:

  1. Combine mayonnaise, garlic, blackened seasoning, lemon zest, lemon juice and vermouth for use as a baste.
  2. Thoroughly coat both sides of the salmon fillets with the basting sauce.
  3. Place salmon skin-side-up on the grill.
  4. Cook over medium-high heat, brushing often with baste.
  5. Cook approximately 4 minutes per side, turning salmon once, until internal temperature reaches 140 degrees F. or salmon flakes easily with a fork.
  6. Garnish with cilantro.
