Whether you’re gathering friends and family together to celebrate Easter or you’re just enjoying spring’s abundance after this long, cold winter, hosting brunch is a great way to do it. Not only is brunch a little more laid back than a formal dinner, but you’ve got a little more freedom with the menu incorporating both sweet and savory dishes.
We love to build the menu around an egg casserole. They can be made the night before and you can add whatever ingredients your guests will love! Start with a basic casserole, which is great just the way it is, and use your own combinations of bread and cheeses. Why not scatter over your favorite vegetables, like blanched asparagus pieces, roasted cherry tomatoes or diced sweet onions, before baking? Or try this recipe; it’s got all sorts of vegetables stirred in for lots of color and texture. The sausage can easily be omitted from each recipe, so everyone, even the ones who don’t eat meat, can enjoy brunch.
Need something sweet? Monkey bread is always a hit, but we’ve found something that’s sure to drive your guests wild. And for the traditionalists, make a pan of Baked French Toast or Buttermilk Cinnamon Rolls. Complete the menu with a yummy fruit salad. You may not even need dessert. But if you do, there’s always cake.
Don’t forget to round out the table with pitchers of sparkling water and orange juice. Maybe some fancy coffee too?
