Grandma Kirschner’s Date Nut Bread
Dense and sweet, this tea cake is delicious without a spread.
- 8 oz pitted, dried dates
- 3/4 cup chopped walnuts or hazelnuts
- 1 cup raisins
- 1 tsp baking soda
- 1 cup boiling water
- 2 cups white flour
- 1 cup sugar
- 1 tsp baking powder
- 2 egg whites
- Non-fat cooking spray
- Preheat oven to 350°F (176.6°C). Prepare a loaf pan by spraying with
non-fat spray. Coarsely chop dates and combine with nuts and raisins in a
bowl. Sprinkle baking soda over this mixture. Pour boiling water over the
contents of the bowl. Cover and set aside while mixing the rest of the

mix well. Add first bowl's ingredients to second bowl and mix well. Turn
into prepared loaf pan and bake for 1 hour. Let cool before slicing.
