  1. Fresh sweet corn should be cooked and served the day it is purchased, but can be refrigerated up to a day. Remove the husks and silk just before cooking.
  2. Look for ears with bright green, snug fitting husks and golden brown silk. Kernels should be plump and come all the way to the tip of the ear and the rows should be tightly spaced.
