Kale, which is still growing in popularity in both the retail and foodservice markets, now has its own day. National Kale Day is held on the first Wednesday in October and will continue to be an annual celebration of eating, growing and sharing kale throughout America. It’s certainly a day on which Lincoln Center Hy-Vee dietitian, Amy Clark, will be celebrating this superhero vegetable.
