Preserve the Taste of Summer is a comprehensive food preservation program that includes both online lessons and hands-on workshops.

  3. All participants are required to complete the online lessons 1 and 2. After completion of Lessons 1 and 2, participants are eligible to select Method-Specific Lessons (below) and attend the accompanying hands-on workshops to be held at Waterfront Hy-Vee.

ONLINE LESSONS

GENERAL OVERVIEW LESSONS 1 and 2

  1. Food Safety
  2. Canning basics

METHOD-SPECIFIC LESSONS 3 through 8

3. Canning acid foods
4. Pressure canning low-acid foods
5. Preparation and canning of pickled and fermented foods
6. Making and preserving fruit spreads
7. Freezing foods, storage of frozen and refrigerated foods
8. Drying foods

HANDS-ON WORKSHOPS
Held in the Waterfront Hy-Vee Club Room at 1720 Waterfront Drive, Iowa City, IA

  • Hot water bath canning (salsa making) and freezing (Date T.B.A. Summer/Fall 2015): Please complete Method-Specific Lessons 3 and 7
  • Jams and dehydrating (Oct. 3rd, 2014, 5 p.m. to 9 p.m.): Please complete Method-Specific Lessons 6 and 8
  • Pickle making (Sept. 20th, 2014, 11 a.m. to 3 p.m.): Please complete Method-Specific Lessons 3 and 5
  • Pressure canning (Date T.B.A. Summer/Fall 2015): Please complete Method-Specific Lesson 4 and any other lesson 3 through 8 $75 - GOLD
  • Complete all eight online lessons
  • Complete one hands-on workshop $50 - SILVER
  • Complete general overview online lessons
  • Complete two method-specific online lessons
  • Complete one hands-on workshop

ADDITIONAL OPTIONS

  • $5 each - Additional online lessons (Silver level)
  • $40 each - Additional hands-on workshops
