All you need:
15 pitted cherries
1/4 c. fresh mint leaves
2 tbsp fresh lime juice
1 (12 oz) can Hy-Vee frozen lemonade concentrate, thawed
1 1/2 c. cherry rum (12 oz)
4 1/2 c. chilled Hy-Vee club soda (36 oz)
Fresh mint sprigs, optional
All you do:
Place cherries, 1/4 cup mint leaves and lime juice in a cocktail shaker or muddling glass. Use a muddler to gently “bruise” the mint and release the cherry juice.
Pour muddled contents into a pitcher; add lemonade concentrate and cherry rum and stir to combine.
Just before serving, slowly add club soda and stir together. Serve in ice-filled glasses. If desired, garnish with mint sprigs.
Note: Many summer cocktails use fresh ingredients such as herbs and fruit, and often muddling is required. Muddling helps to release the flavors of the fresh ingredients so they bind better with the alcohol.
