Apple Pie Preserves

All you need:
2 pounds apples, peeled, cored and finely chopped (about 6 cups)
2 c. Hy-Vee 100% apple juice
1 tbsp Hy-Vee lemon juice
2 1/4 c. Hy-Vee granulated sugar, divided
1 (1.75 oz) pkg powdered fruit pectin for less- or no-sugar-needed recipes
1 1/2 tsp Hy-Vee ground cinnamon
1/4 tsp ground nutmeg
1/2 tsp Hy-Vee butter

All you do:
In a large saucepan or Dutch oven, combine apples, apple juice and lemon juice. Bring to boiling; reduce heat to medium and simmer about 12 minutes or until apples are soft.
In a separate bowl, stir together 1/4 cup granulated sugar, fruit pectin, cinnamon and nutmeg; stir into apple mixture. Return to boiling. Stir in remaining sugar and butter. Return to boiling once again. Remove from heat. Ladle into sterilized jars, leaving 1/4-inch headspace. Process in boiling water bath for 10 minutes (after water has returned to full boil).
