All you need:
1 pint raspberries
1 pint blackberries
1 pint blueberries
1 pint strawberries, hulled and halved
2 tsp finely grated lemon peel
2 to 3 tbsp fresh lemon juice
1/4 c. Hy-Vee sugar
Pinch salt
2 c. vanilla frozen yogurt
Fresh mint leaves
All you do:
Preheat grill to medium-high (350°F to 400°F).
Place berries, lemon peel, lemon juice, sugar and a pinch of salt in a medium bowl; toss to combine. Transfer berry mixture to a 9-by-13-inch sheet of heavy-duty foil. Fold up edges of foil to form a packet. Crimp and tightly seal edges.
Place foil packet on grill. Grill 10 minutes or until the berries release their juices.
Spoon frozen yogurt into individual dishes. Top with warm berry sauce and mint, and serve.
