Ingredients:

  • 2 ripe tomatoes, chopped
  • 1/3 avocado, chopped
  • 1 cucumber, chopped
  • 20 Hy-Vee large ripe olives
  • 3 basil leaves, chopped
  • 1 tbsp Hy-Vee Select olive oil
  • 1 1/2 tbsp Grand Selections balsamic vinegar
  • Hy-Vee sea salt, to taste
  • freshly cracked Hy-Vee black pepper, to taste

All you do

  1. In a large bowl, combine tomatoes, avocado, cucumber, olives and basil.
  2. In a small bowl, whisk oil and vinegar.
  3. Divide tomato mixture evenly among 8 plates. Drizzle each evenly with prepared vinaigrette; season to taste with salt and black pepper.
