Shrimp Deviled Eggs

Ingredients:

  • 6 hard-boiled egg yolks
  • 3 tbsp Hy-Vee light mayonnaise
  • 1 tbsp finely chopped onion
  • 1/2 tsp fresh lime juice
  • 1/2 tsp Hy-Vee yellow mustard
  • 1/4 tsp ground cumin
  • 4 cooked medium shrimp, peeled and finely chopped
  • Chopped fresh cilantro, for garnish

All you do

  1. Mash yolks with fork. Stir in mayonnaise, onion, lime juice, mustard and cumin until well blended. Fold in shrimp. Refill whites, using about 1 tablespoon yolk mixture for each egg half. Chill to blend flavors. Garnish with cilantro, if desired.
