Salmon with Watermelon Couscous

Ingredients:

  • 1 (6 oz) package Near East original plain pearled couscous
  • 1 (4 oz each) salmon fillets
  • Hy-Vee salt and pepper, to taste
  • 1 c. diced seedless watermelon
  • 1 tbsp Hy-Vee honey
  • 1 tbsp fresh mint

All you do

  1. Prepare couscous as instructed on package, omitting the oil.
  2. Meanwhile, heat a large non-stick skillet over medium-high heat. Cook salmon for 4 to 5 minutes on each side, or until fish flakes easily. Season with salt and pepper as desired, remove from heat and set aside.
  3. Stir watermelon, honey and mint into cooked couscous. Mix well and serve with salmon.
