Quick and Easy Black Bean Fajitas

Ingredients:

  • 1/2 yellow onion, sliced
  • 1 green bell pepper, seeded and sliced
  • 1 (15 oz) can Hy-Vee black beans, drained and rinsed
  • 1 tbsp lime juice
  • 1/4 tsp Hy-Vee chili powder
  • 4 Hy-Vee fajita-style tortillas

All you do

  1. In a large skillet, cook onion and bell pepper slices for 5 minutes over medium-high heat.
  2. Add beans, lime juice and chili powder and cook for 2 more minutes.
  3. Lay out tortillas on a work surface. Assemble fajitas by evenly distributing the vegetable/bean mixture among the tortillas.
