Ingredients:

- In a small saucepan, combine plums, vinegar and ginger. Cook over medium-low heat for 10 minutes, stirring occasionally.
- Meanwhile, heat oil in a large skillet over medium-high heat. Add trout and season with salt and pepper. Cook for 3 to 5 minutes on each side, or until fish is opaque and flakes easily with a fork.
- Serve trout with plum sauce and top with freshly squeezed lime juice if desired.
