Lightened-Up Deviled-Egg Potato Salad

Ingredients:

  • 1 1/2 c. fat-free salad dressing
  • 1 tbsp Hy-Vee yellow mustard
  • 1/4 c. chopped green onion
  • 3 pounds Hy-Vee russet potatoes, peeled, cubed and cooked
  • 6 Hy-Vee large eggs, hard-cooked, peeled, chopped
  • Paprika, optional

All you do

  1. In a large bowl, stir salad dressing, mustard and green onion until blended.
  2. Gently stir in potatoes and eggs. Cover and refrigerate 3 to 4 hours or until chilled.
  3. Sprinkle with paprika before serving, if desired.
