Ingredients:

  • 1/4 c. chopped red pepper
  • 1/4 c. chopped green pepper
  • 1/2 c. sliced fresh mushrooms
  • 1 1/2 c. diced Beeler's ham
  • 3/4 c. Hy-Vee 2% shredded cheddar cheese
  • 6 slices Hy-Vee wheat bread, torn into bite-size pieces
  • 2 Sparboe Omega 3 eggs
  • 1 c. Hy-Vee egg substitute
  • 2 c. Hy-Vee non-fat milk
  • 1 1/2 tsp Mrs. Dash original seasoning
  • 1/2 tsp Hy-Vee seasoned salt

All you do

  1. In a medium skillet, sprayed with cooking spray, saute peppers and mushrooms until tender, about 5 minutes.
  2. In a large bowl, stir together peppers, mushrooms, ham, cheese and bread
  3. In a separate bowl, stir together eggs, egg substitute, milk, Mrs. Dash seasoning and seasoned salt. Pour egg mixture over the bread mixture. Stir to combine. Pour into a greased 9-by-13-inch baking pan. Cover. Refrigerate for 1 hour or overnight.
  4. Preheat oven to 350 degrees. Bake uncovered for 45 minutes or until set.
