Chipotle Chicken with Buttermilk Chive Sauce

Ingredients:

  • 1/2 c. Hy-Vee light sour cream
  • 1/4 c. buttermilk
  • 1 tbsp minced fresh chives
  • 1 tsp Hy-Vee salt, divided
  • 1/4 tsp coarse ground Hy-Vee black pepper
  • 2 tsp chipotle seasoning
  • 2 tsp Hy-Vee paprika
  • 1 tsp packed Hy-Vee brown sugar
  • 1/2 tsp Midwest Country Fare onion powder
  • 4 Smart Chicken™ boneless skinless chicken breasts
  • Fresh greens

All you do

  1. To make buttermilk chive sauce, in a small bowl combine sour cream, buttermilk, chives, 1/2 teaspoon salt and pepper. Cover and refrigerate until serving time.
  2. For rub, stir together chipotle seasoning, paprika, brown sugar, onion powder and remaining 1/2 teaspoon salt. Rub about 1-1/2 teaspoons onto each chicken breast.
  3. Grill chicken over direct medium heat for 6 to 8 minutes per side or until internal temperature reaches 165 degrees. Serve chicken with buttermilk chive sauce and fresh greens.
