Ingredients:

  • 2 (8 oz each) split chicken breasts
  • 1 tbsp Hy-Vee taco seasoning
  • 4 Hy-Vee fajita tortillas
  • 1 tbsp Hy-Vee vegetable oil
  • 8 tbsp Hy-Vee refried beans, heated, divided
  • Hy-Vee shredded lettuce, optional
  • Hy-Vee salsa or diced tomatoes, optional
  • Hy-Vee shredded taco cheese, optional
  • Hy-Vee sliced olives, optional
  • Hy-Vee light sour cream, optional

All you do

  1. Rub each chicken breast with taco seasoning. Grill over medium heat until cooked through, about 15 minutes. Remove from grill. Keep warm.
  2. Increase heat to high. Brush tortillas with oil. Grill 4 minutes; turn. Grill an additional 3 minutes or until crisp and golden brown.
  3. Remove chicken from bone; shred. Spread each tortilla with 2 tablespoons beans. Top with shredded chicken and remaining ingredients, if desired.
