Caliente Chicken Quesadillas

Ingredients:

  • 1 c. fat-free sour cream
  • 1 tbsp ground cumin
  • 1 tbsp Hy-Vee chili powder
  • 1 tsp Hy-Vee garlic powder
  • 3/4 pound uncooked chicken breast, diced
  • 1 (8 ounce) bag Hy-Vee 2% milk shredded 3-cheese Mexican blend cheese
  • 1 (4 ounce) can Hy-Vee diced chilies
  • 1 c. Hy-Vee black beans, drained and rinsed
  • 10 (6-inch) Hy-Vee flour tortillas

All you do

  1. Combine sour cream, cumin, chili powder and garlic power. Mix well and set aside.
  2. Heat a large non-stick skillet over medium-high heat. Stir-fry chicken until no longer pink, about 5 minutes. Place in a large mixing bowl.
  3. Stir in cheese, chilies and beans. Mix thoroughly.
  4. Place about 1 cup chicken mixture on each of 5 tortillas. Gently place a second tortilla on top.
  5. Cook one quesadilla at a time in a skillet over medium-high heat for 1 to 2 minutes on each side.
  6. Serve hot with sour cream mixture.
