BBQ Beef and Coleslaw Sandwich

Ingredients:

  • 2 pounds Hy-Vee Angus Reserve boneless beef bottom round roast
  • 1 c. Hy-Vee beef broth
  • 1 c. red wine
  • 1/4 c. Hy-Vee apple cider vinegar
  • Hy-Vee barbecue sauce, to taste
  • 8 Hy-Vee baking stone Asiago buns
  • 2 c. Hy-Vee shredded coleslaw mix

All you do

  1. In a medium saute pan, sear all sides of roast over medium-high heat. Place roast, beef broth, wine and apple cider vinegar in a 3- to 4-quart slow cooker. Cover and cook on LOW for 8 to 9 hours.
  2. Drain beef and shred with two forks, discarding liquid. Toss beef with barbecue sauce. Place BBQ beef on bottom bun and top with coleslaw mix and top bun.
