Asian Chicken Salad from Seasons Magazine

Serves: 8 (about 1-1/2 cups each)

All you need:

  • 1/4 c. rice vinegar
  • 2 tbsp Hy-Vee soy sauce
  • 2 tbsp sesame oil
  • 2 tsp grated fresh ginger
  • 2 tsp Hy-Vee honey
  • 6 c. Hy-Vee romaine salad greens
  • 6 c. Hy-Vee spring mix salad greens
  • 1 Hy-Vee rotisserie chicken, skin removed, deboned and chopped
  • 2 medium carrots, shredded
  • 2 c. snow peas, trimmed
  • 2 (15 oz each) cans Hy-Vee mandarin oranges, drained
  • 1/2 c. Hy-Vee sliced almonds, toasted

All you do:

  1. For dressing, in a small bowl whisk together vinegar, soy sauce, sesame oil, ginger and honey. In an extra-large bowl, toss together salad greens, chicken, carrots, snow peas and mandarin oranges. Add dressing; gently toss to coat. Sprinkle with almonds.
