Whether you’re a football fanatic or couldn’t care less, we can all unite around one thing on Big Game Sunday: the food. This is America’s second-largest eating day, falling behind only Thanksgiving in terms of calories consumed. An average daily intake for Americans is 2,000 calories, but during the big football show we eat that much in less than three hours.
Often missing from the spread, however, are fruits and vegetables. If you’re afraid a veggie platter will play second string to the standard fare, pull a kitchen quarterback sneak by incorporating fruits and vegetables in creative ways.
HAIL MARY SHOOTERS
Serves 14 (1/2 cup each)
All you need:
- 2 (14.5 ounce) cans Hy-Vee diced tomatoes with peppers, onions and garlic (fire-roasted)
- 1 1⁄2 cups Bloody Mary mix
- 1 small cucumber, seeded and chopped
- Juice of 1 lime, divided
- 1 tablespoon Worcestershire sauce
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup vodka (or to taste), optional
- 14 large cooked shrimp, peeled and deveined
All you do:
- Do not drain the tomatoes. Combine the tomatoes and Bloody Mary mix in a large mixing bowl.
- In a separate small bowl, combine the cucumber and juice of half the lime; toss to combine. Set aside 1 cup of the cucumber.
- Add the remaining cucumber to the tomato mixture along with the juice of the remaining half of lime, Worcestershire sauce, salt and black pepper. Working in batches, blend the mixture for 15 to 20 seconds or until thoroughly pureed. Return pureed mixture to the bowl; cover and chill 2 hours or up to overnight.
- Before serving, if desired, stir in vodka. To serve, ladle pureed tomato mixture into 4-ounce glasses. Top each with a spoonful of the reserved cucumber. Hook one shrimp over the edge of each glass. Serve chilled.
