Hello, I am slim and I exercise 1 hour daily but I only can eat white flour products. I get stomach problems with wheat and fiber products. Most of what I eat are vegetables and fruits. I am lactose intolerant too. I only can eat certain kind of foods. No creams, no sweets, no bread products, no potato chips, no popcorn. I can eat some legumes. I have problems when I travel and I can't find anything edible at airports. I can't handle sodas or juices. I like beef, chicken and fish but prefer to have my proteins from legumes. In summary, I would like more recipes combining 2 oz. of protein and vegetables. Can anyone help? thanks so much.

It sounds like you may greatly benefit from a consultation from your local Hy-Vee dietitian to help identify some good food choices based on your specific needs and to ensure that you are consuming a balanced diet.  Below is a great recipe for this time of year that combines protein from black beans with some other vegetables.  I would recommend that you visit the Hy-Vee website and browse the recipes found under the meal solutions tab for more ideas.  Good luck!

Black Bean Soup with Sweet Potatoes and Kale
Serves 6 (about 1 cup each)
Source: Hy-Vee Seasons Health 2012

Ingredients: 

  • 1 tbsp Hy-Vee Select olive oil 
  • 1 medium onion, chopped
  • 2 cloves garlic, finely chopped
  • 1 (6 ounce) can Hy-Vee tomato paste
  • 1 1/2 tsp ground cumin
  • 1/2 tsp Hy-Vee crushed red pepper flakes
  • 3 c. vegetable broth
  • 2 (15 ounces each) cans Hy-Vee black beans, drained and rinsed
  • 1 medium sweet potato (about 8 ounces), peeled and cut into 1/2-inch cubes
  • 2 c. packed chopped baby kale

  • All you do:

    1. Heat olive oil in a Dutch oven over medium heat. Add onion and garlic; cook about 5 minutes or until onion is tender. Stir in tomato paste, cumin and crushed red pepper flakes. Add vegetable broth, black beans and sweet potatoes; stir and bring to boiling over medium-high heat. Reduce heat to medium-low; cover and simmer 15 minutes. Stir in kale. Simmer, uncovered, 10 minutes more.
