Dreamfield pasta for diabetics

My son is a newly diagnosed type 1 diabetic. I bought the Dreamfield pasta and am not sure what I should be counting for his carbs. He is on the ratio for 15 carbs to 1 unit of insulin.
 
On the box it shows Total carbs at 41 per 1/2 c. dry serving,  but then it states in another place Total carbs 41 minus 5 for fiber  minus 31 for protected carbs = digestible carbs at 5.  Dreamfield says it helps limit the rise in blood sugar levels that normally occur after eating regular pasta.

I am wondering if I calculate by the 41 g of carbs, or by the digestible 5g of carbs.  I just don't want to do it wrong and either give him to much insulin or not enough.

I would appreciate any help I could get on this. Thank you.

This is a very good question and one that is based on each individual’s body and the way they metabolize the pasta. The American Diabetes Association’s recommendation is that you take the total dietary fiber divided by 2 and then subtract that amount off the total carbohydrate.  So, in this case you would want to calculate by 38.5 g.  This would be a good starting point. If you use this product frequently, you may find that because it has a lower glycemic index, you may be able to adjust it even more to around 35 grams (as an example). I am sorry this is not a definitive answer, but because each person handles the pasta a little differently, it would be best to experiment with it a little bit to find out how your son’s body handles the pasta and what to really count it as.

Because of the resistant starch in this product, much of the carbohydrate is not digested and absorbed.  This means that it has a smaller effect on blood sugar levels than a traditional or whole wheat pasta does.  I have had customers tell me that while this pasta doesn't raise their blood sugar as much as other types of pasta, they do have to count more than the 5 grams of "digestable" carbohydrate listed on the package.  I would suggest that you experiment by checking your blood sugar before you eat the pasta and then again 2 hours after.  You could do this one day with a traditional pasta and then the next day with the dreamfields pasta to compare the effect on your blood sugar.  The bottom line is that if your blood sugar is within normal limits 2 hours after eating your current serving size, then you can keep doing what your are doing.
